In Rio Vermelho, a trendy neighbourhood of Salvador, tourist guides boast the merits of the moqueca, a fish stew that is a specialty of the region. Those who are familiar with the local cuisine advise another dish, acarajé, a deep-fried bean fritter filled with a mixture of shrimp, crabs, nuts and coconut (called vatapa).
