Nine Wells Watercress Farm has been owned by the Sansom family for over 200 years. Wholesome with a slight peppery bite, watercress is an archetypal British ingredient... at least, it used to be. Victorian-era labourers ate these abundant greens because they couldn’t afford much else, which is why watercress was called "the poor man’s bread." The well-to-do would also dine on chilled watercress soups and sauces. Due to popular demand, watercress was once an important cash crop. Today, only two watercress farms remain in Hertfordshire, of which Nine Wells is one. After a visit, head to the church at nearby St. Paul’s Walden, where Queen Elizabeth, the Queen Mother, was christened.
