Tracing its origins back to a market stall in 1888, Bob Carver’s Fish and Chip Restaurant is today something of an institution in Hull. As is its famous Pattie, a deep-fried disc of mashed potato in breadcrumbs and flavoured with sage. Enjoyed by residents and visitors alike, the pattie recipe is a closely-guarded family secret, handed down for three generations. The current Bob Carver sells about 500 handmade patties a week. Not surprising, really, considering that in a recent online poll to identify Hull’s favourite regional dish, the pattie picked up some 40 percent of the votes!
