To discover the culinary side of Périgueux, go to a beautiful Renaissance residence on Rue Limogeanne. Look for the initials AC above the door. So far, perhaps nothing spectacular. But you’re in front of the house of Antoine Courtois, one of the illustrious 18th-century ‘pâtissiers’. Extremely popular in Versailles, and in the courts of Prussia and England, his partridge pâté made the city famous. Back then, these craftsmen – great-grandfathers to today's pork butchers – were famous for making such gourmet delicacies. The legendary local speciality was first invented in the Middle Ages and became very popular in the 18th century. It went all over Europe and even had a diplomatic function: As a gift, it was a surefire way to curry favour with influential individuals. Try it for yourself and see if you could be persuaded!
