Albi is known as the birthplace of painter Toulouse Lautrec. But that is only one of its many treasures. Take the totally authentic local cuisine, for example. Among Albi’s specialities is the gimblette, a biscuit shaped like a ring. It is flavoured with citron, ancestor of the lemon. This humble treat has received a surprising amount of attention over the years. It is said that the dogs of Louis XV were mad about it. More recently, contemporary art star Jeff Koons put it under the spotlight in one of his designs for a famous luxury brand best known for its initials.
